PRIME FROZEN FISH

 

 

Japan’s per capita consumption of fish is 93 pounds. That’s right, 93 pounds per person per year. And over 90% of the fish consumed in Japan has been frozen – because their focus is on quality, not whether a piece of fish has been frozen or not.

 

 

At AGG, we don’t freeze fish because we have to, we freeze fish because we want to. And because they’re our fish, fish we catch, we are able to freeze only the best. We freeze pre-rigor and we freeze at minus 40 F. The result is cellular damage of less than 5% (traditional freezing is around 30%), meaning when it thaws, it thaws to a state better than most fresh – none of that ‘cardboard’ taste associated with traditional freezing methods, and little to no purge.

 

 

WILD CAUGHT, SKINLESS CORVINA FILLET (COLD SMOKED)

 

 

Thick, firm fillets, nicely trimmed, deep skinned and individually vacuum packed. The Peruvians consider Corvina to be the only legitimate fish to make Ceviche with. It’s mild flavor and thick flake also makes it suitable for grilling, broiling or baking.

Caught early day in Panama’s Lake Bayano, trucked to our plant, filleted, deep skinned. boned and frozen same day, these fillets are cut from wild, hormone free fish. Their taste is mild – never muddy, as they surface feed – and the fillets run true to grade, unlike their farm-raised cousins.
